Spicy Red Sauce/Tomato Sauce

As you get your bearings in the kitchen, you’ll begin to accumulate your favorite recipes and dishes. Before you get ahead of yourself, however, I want to bring you back to the basics. Your dishes can be transformed by the right ingredients, and that means making certain items from scratch instead of off the shelf. You’ll be amazed by the difference a little extra effort makes when composing even the most familiar meals.

Today, we’re going to tackle a recipe that is quintessential for many great italian dishes, and more. Every good beginner chef should have a homemade red sauce recipe on hand. Here’s mine:

Ingredients

10 kumato tomatoes

1 handful thai basil

1/4 cup extra virgin olive oil

1 yellow onion

5-7 garlic cloves

1 large tin crushed tomato

3 thai chilis

Steps

  • Heat up EVOO in a stock pot 

  • Sautée chopped onions, thai chillis and garlic

  • Add the cut tomatoes, then thai basil 

  • Wait a minute or two then add can of crushed tomatoes

  • Blend everything with a hand held immersion blender 

  • Let simmer for 30 min

This sauce is a perfect substitute for canned red sauce. Incorporate it into your favorite pasta, or try it out with my chicken parmesan for four recipe.
