Fresh & Simple: Papaya Salad

Hey guys!

Today we’re diving into one of my favorite easy salad recipes. It’s one that will add a fresh, unique twist to any dinner. Not only is it bright and beautiful, but papaya is also an amazing source of vitamins, potassium, magnesium, carotenes, and more good stuff. A delicious dish that’s also impressively healthy? Sounds like a win-win to me.

As with so many of my recipes, you can tweak this one to your palette. Keep an eye out for optional steps and flexible ingredients in my instructions, but don’t worry, I’ll guide you!

I suggest serving this salad before my go-to classic chicken parm recipe for a dinner that’s sure to impress.

Salad Ingredients

1 young or green papaya (not to be mistaken for a red papaya)

1/2 pound long bean (or french bean if you can’t find long beans)

1/2 pint of cherry tomatoes

optional: roasted or raw peanuts

Steps

  • First, peel off the outer green layer of the papaya
  • Next, use a jagged vegetable peeler to grate the flesh into a bowl. You do not want the seeds in your salad, so grate down almost to the center, but do not break into the center of your papaya
  • Optionally, you can blanch the long/french beans. This is done by giving them a quick boil followed by an ice bath. You can also choose to leave them raw. I suggest trying this recipe both ways, but if you’re in a time crunch, it’s great to know you can skip this step!
  • Cut or chop cherry tomatoes
  • Combine all ingredients in a large bowl

Dressing Ingredients

1/2 cup fresh lime juice

1/2 cup fish sauce

5-7 minced garlic cloves

3-5 thai red chilli (depending on the desired spice level)

1/4 -1/2 cup white sugar (depending on the desired sweetness level)

Steps

  • Mix all dressing ingredients together, pour over salad and toss
  • Let sit 3-5 min, toss again, then serve

I hope you find this salad is an easy and delicious one to add to your repertoire! No pre-mixed, store bought kit will come close to a homemade salad, and this one is a crowd pleaser and a quick go-to.
