How to Make Kalamata Bread

In this week’s Cooking with Bradley segment, we are sharing with you a very simple artisan bread recipe that you can make your own by swapping the olives for any number of alternate mix-in options!

Easy artisan bread with a twist! There are tons of ways to enjoy this recipe, whether you use the bread for sandwiches, serve with charcuterie, or enjoy warm with butter! The kalamata olives are delicious, but if you’d prefer a different flavor profile, check out our alternative mix-ins at the end of this recipe, or experiment with your own dry ingredient additions!

Ingredients:

  • 300 grams A.P flour
  • 200 grams “00” flour (pizza flour)
  • 1 teaspoon dry active yeast
  • 1 teaspoon sugar
  • 400 ml room temperature water
  • 1.5 teaspoon salt
  • Half jar of sliced kalamata olives
  • 1.5 teaspoon “00” flour

Steps:

First, place all dry ingredients except the 1.5 teaspoon “00” in a large mixing bowl and whisk

Next, add the olives

Then, make a well (or a little dent)  in the center of the dry ingredients and add in the

water

Using a hand dough mixer, or simply using your hands, mix everything together until completely mixed

Sprinkle a little flour on your countertop and begin to knead the dough for about five

minutes

Oil another bowl and place your kneaded dough in the bowl. Cover this tightly with plastic wrap

and leave in a warm place for about two hours

Have your oven ready at 450 Fahrenheit and grease a bread pan

After the bread has risen, punch it out onto the counter top in a rectangular shape

Grab two corners of a long side and fold into the center then fold over the other side overlapping the center and place in your bread pan

Now, sprinkle the 1.5 teaspoon of “00” flour over top and place in the oven for 45 min

Let the bread pan cool for just a moment, then move the loaf to a wire rack to cool, in order to prevent the base from becoming soggy

Here are some delicious alternative mix-ins you can try with this recipe:

  • Cranberries
  • Chilis 
  • Assorted nuts
  • Fresh herbs
