Today we’re diving into one of my favorite easy salad recipes. It’s one that will add a fresh, unique twist to any dinner. Not only is it bright and beautiful, but papaya is also an amazing source of vitamins, potassium, magnesium, carotenes, and more good stuff. A delicious dish that’s also impressively healthy? Sounds like a win-win to me.
As with so many of my recipes, you can tweak this one to your palette. Keep an eye out for optional steps and flexible ingredients in my instructions, but don’t worry, I’ll guide you!
I suggest serving this salad before my go-to classic chicken parm recipe for a dinner that’s sure to impress.
Salad Ingredients
1 young or green papaya (not to be mistaken for a red papaya)
1/2 pound long bean (or french bean if you can’t find long beans)
1/2 pint of cherry tomatoes
optional: roasted or raw peanuts
Steps
Dressing Ingredients
1/2 cup fresh lime juice
1/2 cup fish sauce
5-7 minced garlic cloves
3-5 thai red chilli (depending on the desired spice level)
1/4 -1/2 cup white sugar (depending on the desired sweetness level)
